Keto Butter Chicken with Cauliflower Rice

Ingredients

  • 1 lb chicken breast or thighs, cut into pieces

  • 1 bag cauliflower rice

  • 3 tbsp butter

  • 2 tbsp olive oil

  • 3 cloves garlic, minced

  • 1 tsp ginger

  • 1 tsp paprika

  • 1 tsp chili powder

  • 1 cup heavy cream

  • ½ cup tomato sauce

  • Salt and pepper

  • 2 tbsp parsley or cilantro for topping

Instructions

  1. Heat olive oil in a pan over medium heat.

  2. Add chicken, season with salt and pepper, and cook until browned. Remove and set aside.

  3. In the same pan, add butter, garlic, and ginger. Cook for about 1 minute.

  4. Stir in paprika and chili powder.

  5. Add tomato sauce and heavy cream and mix well.

  6. Return chicken to the pan and simmer until fully cooked and coated in sauce.

  7. In a separate pan, cook cauliflower rice until tender.

  8. Serve butter chicken over cauliflower rice and top with herbs.
