Keto Shrimp Scampi with Zucchini Noodles

A quick keto dinner that feels light but still satisfying.
This shrimp scampi is made with garlic, butter, and zucchini noodles for a low carb meal that comes together fast and works any night of the week.

Ingredients

  • 1 lb shrimp, peeled and deveined

  • 2 zucchini, spiralized

  • 3 tbsp butter

  • 2 tbsp olive oil

  • 4 cloves garlic, minced

  • Juice of 1 lemon

  • Salt and pepper

  • 2 tbsp parsley, chopped

  • Optional parmesan cheese

Instructions

  1. Heat olive oil and 1 tbsp butter in a pan over medium heat.

  2. Add shrimp, season with salt and pepper, and cook until pink. Remove and set aside.

  3. In the same pan, add remaining butter and garlic. Cook for about 1 minute.

  4. Add zucchini noodles and cook for 2 to 3 minutes until slightly softened.

  5. Stir in lemon juice and return shrimp to the pan.

  6. Toss everything together and top with parsley and optional parmesan.
